Pork with Okra – This recipe is easy to make, super healthy and very nutritious. I love cooking meat with vegetables, especially one of my favorite vegetables: okra. Because it is slimy, many people do not like to eat it. However, it depends on how we cook it. One of the main dishes of São Tomé and Príncipe is Calulú. Even those who don’t like okra love this dish, which contains okra.

For this recipe, there is always the option of reducing the amount of okra, or replacing it with another vegetable (green beans, broccoli, etc.). Whatever you prefer. Carrots, in addition to being very healthy, have the advantage of sweetening the recipe. It’s very tasty. Try it! 😋

How to prepare it

1. Wash and cut the meat into small pieces. Season with lemon, salt, garlic and spices. I used cumin, black pepper, oregano, coriander and nutmeg.



2. Wash, peel (except okra) and cut the vegetables into small pieces.

3. Sauté the onion together with the green pepper.



4. Add the meat, tomato sauce and vegetables.



5. Leave to cook for 20 to 30 minutes, over medium heat, stirring once or twice.



6. And that’s it! Serve warm with any side dish you like: couscous, rice, potatoes, etc.
