Marshmallows were always one of those snacks I loved for the texture as much as the taste. The good news is that keto marshmallows are absolutely possible, and this version is as simple as it gets: 3 ingredients, a hand mixer, and a little patience while they set.
These are soft, fluffy, sugar free, and the best part is the nutrition: 0 net carbs per serving.

Ingredients (Serves 16)
- 2 tbsp unflavored gelatin powder
- 1 cup water
- 2 cups erythritol (powdered works best, but granulated also worked fine for me)

How to Make Keto Marshmallows
- Prepare the pan: Line a baking pan with parchment paper and set aside.
- Heat and dissolve: Heat half of the water and the gelatin in a pan over medium heat, stirring frequently. When bubbles begin to form, pour in the remaining water and the erythritol. Stir until the sweetener dissolves and the mixture looks translucent. Remove from heat and keep stirring until everything is well combined.
- Whip until fluffy: Pour the mixture into a large bowl and beat with a hand mixer for 12 minutes, until the volume doubles and the mixture looks fluffy.
- Set: Pour the marshmallow mixture into the lined pan and refrigerate for at least 6 hours, preferably overnight.
- Cut and store: Use a sharp knife to cut the marshmallows into squares. Store them in an airtight container in the fridge.
Texture Notes (so you don’t get disappointed)
- The 12 minutes of mixing matter. That’s what gives you the fluffy texture.
- If you want a cleaner cut, chill well overnight and use a sharp knife.
