Ingredients

For the dough

  • 2 cups shredded mozzarella cheese

  • 2 tbsp Coconut flour

  • 1/2 tbsp Psyllium husk

  • 1 egg

For the topping

  • 1/2 cup tomato sauce

  • 5 slices of pepperoni

  • 5 tomato slices

  • 1/2 cup of shredded mozzarella cheese



Instructions

Dough

  1. Preheat the oven to 392 degrees F. Line a baking sheet with parchment paper.
  2. Microwave the shredded mozzarella for 2 minutes, stirring halfway through. If you don’t want to use the microwave, heat the cheese on the stove over low heat, stirring frequently, until completely melted and easy to stir.
  3. In a bowl, blend the mozzarella, coconut flour, psyllium husk and egg, until you have a smooth dough.
  4. Grease your hands with olive oil and form 1 dough ball.
  5. Roll out the dough between 2 sheets of baking paper.

Topping

  1. Spread the dough with tomato sauce. Decorate with mozzarella, tomatoes and  pepperoni slices.
  2. Bake for 10-15 minutes, until the crust is slightly browned and the cheese melted.
