Dough
- Preheat the oven to 392 degrees F. Line a baking sheet with parchment paper.
- Microwave the shredded mozzarella for 2 minutes, stirring halfway through. If you don’t want to use the microwave, heat the cheese on the stove over low heat, stirring frequently, until completely melted and easy to stir.
- In a bowl, blend the mozzarella, coconut flour, psyllium husk and egg, until you have a smooth dough.
- Grease your hands with olive oil and form 1 dough ball.
- Roll out the dough between 2 sheets of baking paper.
Topping
- Spread the dough with tomato sauce. Decorate with mozzarella, tomatoes and pepperoni slices.
- Bake for 10-15 minutes, until the crust is slightly browned and the cheese melted.
