Ingredients

For 1 breakfast plate (scale up easily for 2):

  • 1 slice whole wheat bread (toast it, then cut into triangles if you’re serving a child)
  • 1 egg
  • 1 teaspoon olive oil or butter (for frying)
  • 1 yogurt (I used a “Bio” yogurt cup, I can’t confirm the flavor)
  • 1 to 2 cups watermelon, cubed
  • Salt and black pepper (optional)
  • Black coffee (optional)

How to make it:

Toast the bread. Fry the egg in a small non stick pan with a little olive oil or butter. Season with salt and pepper if you want. Place the egg on the toast, add cubed watermelon on the side, and serve with a yogurt. If you’re making this for a child, cutting the toast into triangles and using a divided plate makes it easier and more fun.
